What Your Cookware Might Be Adding to Your Food…& Your Stress Load

Most people focus on food quality. Choosing cleaner ingredients, cooking at home, and being mindful of what goes into each meal. What’s often overlooked is the cookware used.

Cookware isn’t just a passive surface. When heated, its materials can interact with food, releasing small amounts of metals or compounds. This happens with every use, making it important to examine cookware choices when aiming to reduce toxin levels.

Traditional non-stick pans are a well-known concern. Many contain PFAS (per- and polyfluoroalkyl substances), chemicals prized for their non-stick and heat-resistant qualities, but are considered “forever chemicals” that accumulate over time and negatively affect multiple organ systems. PFAS also cross the blood-brain barrier and create a risk for neurotoxicity.* According to the U.S. Environmental Protection Agency (EPA), there is no safe level of PFAS exposure, and studies have connected PFAS to reproductive, endocrine, and neurodevelopmental disorders, infertility, preeclampsia, low birth weight, Type 2 diabetes, early puberty, thyroid disease, decreased IQ in children, and several cancers, including kidney and testicular.**

When non-stick cookware is heated, ages, or gets scratched, the coating can break down, increasing the risk of those chemicals entering food or air. Even with newer ‘PFAS-free’ claims, quality and manufacturing standards vary, prompting many to reconsider non-stick surfaces altogether.

Other common materials come with their own considerations. Aluminum cookware is lightweight and efficient, but it’s also a reactive metal. When cooking acidic foods like tomato sauces or citrus-based dishes, small amounts of aluminum can leach into the food, especially if the surface is worn or uncoated. Copper cookware offers excellent temperature control, but it behaves similarly to aluminum. It’s typically lined with another metal or toxic non-stick coating to create a barrier, yet over time, that lining can wear down, exposing the copper underneath.

Ceramic-coated cookware is often marketed as a non-toxic cookware alternative, and in some cases, it can be a better option, particularly for baking. However, not all ceramic coatings are created equal. Lower-quality versions tend to be less durable and can degrade more quickly with regular stovetop use, which is why they’re often better suited to lower-heat applications than everyday pans.
More stable materials tend to be simpler and time-tested.

  • Cast iron is among the best non-toxic cookware. Properly seasoned, it forms a natural non-stick surface without synthetics, staying stable at high heat—a strong daily choice.
  • Stainless steel is reliable: durable, non-reactive, and coating-free.
  • Glass, especially for baking and food storage, is non-reactive and doesn’t leach into food, making it one of the cleanest choices available.

Instead of trying to change everything at once, start by assessing the cookware you reach for daily. Identify the worn, damaged, or lower-quality pans you use most and consider replacing them with more stable, non-reactive alternatives. This can be a practical first step to reduce unnecessary exposures and support your health over time.
